Folding knives
The Nogent*** folding knife takes a familiar action beyond the kitchen. An 8 cm blade cuts fruit, shares cheese or prepares a picnic, then folds into the handle. Choose a straight edge or 3 mm serrations according to what you enjoy eating outdoors. A small format that keeps the pleasure of preparing food yourself, wherever the meal takes you that day.
A paring knife in another format
A paring knife handles many small preparations. The folding version follows that idea, with a blade that stores inside the handle once the food is prepared. Its 8 cm format remains manageable for ingredients shared during a walk or a break outdoors. The familiar purpose matters more than adding extra functions.
Our blades are made in the Biesles workshops, Haute-Marne. XC50CrMoV15 stainless steel is worked there, then hand-honed after grinding. The folding mechanism does not change that attention to the edge. The cut still matters: a portion of cheese separated, an apple divided or slices of cold meat prepared on a suitable surface. The knife finds its role in a simple meal without being loaded with extra attachments. You choose it for actions you already know and would like to carry with you beyond the kitchen.
Straight or serrated: begin with the food
The straight edge makes precise cuts through cheese, cold meats and firm fruit. It can also peel fruit. Its continuous edge can be maintained with an appropriate tool when sharpening is needed. It is a useful choice when those foods are regular parts of your picnic basket.
The 3 mm serrations help enter a skin or crust. They suit tomatoes, soft fruit and picnic bread. The teeth have a different role from a straight cutting edge, so what you usually eat remains the clearest guide. Neither blade needs to do every task equally well.
Handles come in several colours according to the model. Before putting the knife away, clean and dry it carefully, then fold the blade. These simple habits belong to the life of the tool. Folding scissors complement other small cutting tasks. A blade for food, scissors for thread or a label: each object keeps a purpose you can understand through using it.
